Lemon Herb Sauce

It is a beautiful, sunny, and hot day here in the SW of FL. I am sending warm thoughts to all of you who are still experiencing winter type weather.
Today's lunch came together beautifully. I have been wanting to create an oil free, raw, creamy sauce for zucchini noodles for several weeks now and today was the day to make it happen. This creamy sauce is so bright with lemon and herb flavor it is truly an explosion of tastes! Each bite is slightly different as you taste the Greek Oregano, basil, and lemon balm. So simple, so delicious and bursting with raw, living energy.
Lemon Avocado Sauce with Herbs

I topped some zucchini noodles and diced baby bella mushrooms with this delightful sauce. Right before eating it I decided to add some fresh ground black pepper.

Lemon Herb Sauce

1 avocado
juice of 1 lemon
1 T nutritional yeast
1 T yellow miso
water to process
20 small leaves of Greek oregano
8 leaves of lemon balm
2 large leaves of basil
3 T diced Vadalia sweet onion
In the food processor, process the avocado, lemon juice, nutritional yeast, miso and water until creamy smooth. Add the fresh herbs and diced onion and pulse a few times. Spoon over some spiralized zucchini noodles and diced Baby Bella mushrooms. Top with some fresh ground black pepper. Enjoy!
This last week of Lent is a very special one, Holy Week. This week our Lenten topic is "Good Imagination". We all know that using our imagination can be a fun thing but at times our imagination can produce frightful images and thoughts. We shall try to focus on using our imagination to serve God, using it to assist us when solving problems, helping us to do what we know in our heart is right and also using it to help us learn and grow.
 I personally can always work on controlling my imagination as it tends to get the best of me at times. If I allow it to run wild I feel out of control and helpless. That is when I need to focus my thoughts, stop, pray, listen and react according to what I know is true. For the children I hope to help them see how their imagination can be a wonderful and creative tool they can use for good. Helping them to realize that thoughts, even if imaginative, can be turned into a reality if only they allow themselves to believe in them.
As a side note: I am getting very excited for my 3 day juice feast! I am planning my juicing menu and schedule and look forward to day 1, this Thursday.
+JMJ+ Today I am grateful for red tomatoes in my garden!! Looks like I'll have to juice them!

I love the idea of that sauce! It looks so creamy and good and sounds like it would have just the right amount of tang. You already have tomatoes in your garden to juice? Lucky girl! Blessings to you and your family this Easter week.
