Raw Marinated Cauliflower Salad


I have been making salad dressings and marinades lately with sun dried tomatoes and have been very pleased with the results. I only use the tomatoes that have no preservatives and are NOT packed in oil. Whole Foods has a package that is pretty reasonable. I soak the tomatoes over night in some water and then puree them in my mini food processor using the soak water and other spices. For this particular salad I made a marinade, adding a small amount of EVOO and some Balsamic vinegar in addition to the spices. Here is how it all came together:

Raw Marinated Cauliflower Salad

6-8 sundried tomatoes, soak overnight in water (reserve soak water)
1 T EVOO
3 Tbs water
splash of Balsamic vinegar
dried Italian spices, to taste
onion powder, to taste
fresh ground black pepper, to taste
3 C raw cauliflower, chopped
1 C raw pea pods, chopped
1 small sweet onion, sliced thin
sprouted lentils (see previous posts on sprouting)

In a food processor, process the first 7 ingredients. Toss with the cauliflower, pea pods and onion. Allow to marinate for 6-8 hours. Top each serving with sprouted lentils. Enjoy!

mmmm! looks good!! question though.... are the sundried tomatoes freeze-dried??

No, the tomatoes are only sundried.
