Raw Fajitas


Raw Fajitas

1 organic zucchini, sliced into strips
1 organic yellow squash/zucchini, sliced into strips
1 organic onion, sliced
1 organic red pepper, sliced into strips
I organic yellow pepper, cut into strips
broccoli sprouts

Marinade:

2 T dried Italian seasoning blend
1 T balsamic vinegar
2 T first cold pressed olive oil
splash of water
1 tsp low sodium Tamari soy sauce

Mix the marinade ingredients and pour over the veggies. Cover and allow to marinate in refig. for 48 hours. Stir the veggies two times each day. Dehydrate on 120 degrees until warm and softened.


Serve in Romaine wraps and garnish with broccoli sprouts. Enjoy!

Raw Spaghetti---Ahhhhh, My Spiralizer Broke!

Five Simple Ingredients

Five simple ingredients make up this super simple raw spaghetti recipe. I am sad to say that shortly after making this the lever on my spiralizer broke. It slipped out of my hand and crashed onto the counter top...oops.  Mine is 2 1/2 years old and I use it like crazy! Looks like I'll be shopping for a new one.

The first step is to spiralize your zucchini into pasta noodles. Cut one medium sized zucchini in half , trimming each end flat and place one half on the spiralizer. 

Place the lid on, turn the handle....

And look, instant raw pasta.

For the sauce, place the tomatoes, garlic, orange and parsley into a food processor. Pulse several times until you achieve the consistency desired. Pour over top the raw pasta noodles and enjoy!


5 Ingredient Raw Spaghetti

2 Roma tomatoes, diced
1 small bunch of parsley
1 clove garlic
1 small Valencia orange, peeled and diced
1 medium zucchini

Cut zucchini in half, trim each end slightly to make a nice flat edge. Place half of the zucchini on spiralizer and turn handle to make pasta. Repeat with second half of zucchini. In a food processor combine the tomatoes, parsley, garlic and orange. Pulse until desired consistency is achieved. Pour over top of the raw pasta noodles and enjoy!

Strawberry Banana Maca Pudding

Yes another berry recipe, what can I say I have been indulging in the organic berries lately. I also have been hooked on my chia and was looking for another way to make a yummy pudding. I love the rich taste of Raw Maca and try to find different ways to use it in my raw recipes so the other day I decided to combine it with the fresh organic strawberries and bananas that I just bought at the market. I mixed the Maca with the chia and then topped it with some pureed strawberries and banana. The end result was delicious. Here is my recipe:

Strawberry Banana Maca Pudding

1/4 C chia seeds
1/2 C filtered water or more to get desired consistency
1 Tbs fresh squeezed lemon juice
10 organic strawberries, reserve 3 for the garnish (slice into fourths)
1 organic banana
1 heaping Tbsp Raw Maca powder
In a medium bowl add the chia, water and lemon juice. Allow to gel for 20 minutes. Stir well and add more water if needed to get pudding consistency. Stir in the Maca powder. In a small food processor combine the banana and 7 of the strawberries. Process until almost creamy. Pour onto of the chia and stir. Top with the remaining 3 strawberries as a garnish. Enjoy!

Berries With Raw Coconut Kream

1 carton of fresh organic blueberries
1/2 C raw flaked organic coconut, soaked 8 hours (keep soak water)
1 T hemp seeds
1 T chia seeds
1-2 tsp raw vanilla powder
water as needed to blend
sprouted quiona (optional)

In a high speed blender, add the coconut and the soak water. Blend on high for a minute. Next add the chia, hemp, and vanilla. Blend on high until smooth and thick. Add water as needed for proper blending. Place washed berries into a serving bowl and pour the kream on top. Enjoy!

As I was eating this I decided to add some freshly sprouted raw quiona--it was divine! Made a fantastic breakfast "cereal".

Swimming Blueberries

Today I was wanting something rich and creamy to enjoy with these beautiful organic blueberries that I found at the organic market yesterday. I've been going crazy for the berries lately and will be sharing two more berry recipes in the next few days.

Swimming Blueberries in Creamy Coconut Cashew Mylk

1 C filtered water
1/3 C raw cashews
1 T raw coconut, shredded and dried
1 tsp pure maple syrup
1 carton organic blueberries
3 T white chia seeds

In a high seed blender, blend the water, cashews, coconut and syrup until smooth and creamy. Pour 3/4 of the milk into a bowl and stir in the chia seeds. Allow to set for 20 minutes. Top with the blueberries and a drizzle of the remaining mylk. Enjoy!
I decided to add some cinnamon at the last minute--fabulous.

Raw Marinated Cauliflower Salad


I have been making salad dressings and marinades lately with sun dried tomatoes and have been very pleased with the results. I only use the tomatoes that have no preservatives and are NOT packed in oil. Whole Foods has a package that is pretty reasonable. I soak the tomatoes over night in some water and then puree them in my mini food processor using the soak water and other spices. For this particular salad I made a marinade, adding a small amount of EVOO and some Balsamic vinegar in addition to the spices. Here is how it all came together:

Raw Marinated Cauliflower Salad

6-8 sundried tomatoes, soak overnight in water (reserve soak water)
1 T EVOO
3 Tbs water
splash of Balsamic vinegar
dried Italian spices, to taste
onion powder, to taste
fresh ground black pepper, to taste
3 C raw cauliflower, chopped
1 C raw pea pods, chopped
1 small sweet onion, sliced thin
sprouted lentils (see previous posts on sprouting)

In a food processor, process the first 7 ingredients. Toss with the cauliflower, pea pods and onion. Allow to marinate for 6-8 hours. Top each serving with sprouted lentils. Enjoy!

Going against traditional medicine and the dietary mindset of most Americans can seem daunting at times, but in order to heal and thrive I feel it is mandatory for some situations. Be brave and go against the stream, and LIVE, if it is warranted. Just my two cents for today.

Mango with Vanilla Kream

Just look at this bowl full of ripe, luscious mango drenched in a vanilla kream sauce. The key to the Kream sauce is using the best quality vanilla powder that your budget will allow. My personal favorite is "Ultimate Superfoods Raw Wildcrafted Ground Vanilla". I licked the bowl clean....I love easy, satisfying raw recipes like this one! I am still experimenting with my version of 80-10-10 and I must say I feel really great. I don't get hungry and I am loving all of this fresh, ripe and deliciously sweet fruit.  I actually went through some mild detoxing all over again...that kinda shocked me but I am grateful because I know that alot of cleansing is going on.
Here is my easy recipe:


Mango with Vanilla Kream

2 large ripe mangos, peeled and diced
2 ripe bananas, peeled
4 Medjool dates, pitted and soaked (reserve water)
1/2 tsp raw ground vanilla
splash of the reserved soak water

In a high speed blender add a splash of the soak water, the two bananas, and the pitted Medjool dates. Blend until creamy. Refrigerate the remaining soak water from the dates for tomorrows green smoothie.
Place the diced mango into a bowl and drench with the vanilla kream sauce. Enjoy the insane goodness!!
