Mango Parfait

There is a story behind this massive Bongo's glass. We went on our annual trip to the home school convention in Orlando this past May and as usual, spent a day at Downtown Disney. All of the 5 children seem to enjoy it, so we make a point to go each year. Well, this trip we tried a new restaurant called Bongo's. Hubby indulged in a massive margarita that came with this massive glass. I was upset at first that we had to then lug this thing around the rest of the day and I also was thinking...
"Where in the world am I going to store this in my cupboards that are filled to capacity???"
I found a spot for the glass and boy am I thrilled. I am having so much fun eating several of my raw recipes in it! One of which is this fantastic parfait I came up with specifically to fill this very vessel.

Mango Parfait

6 soaked and pitted Medjool dates
1 T hemp seeds or use soaked, raw pumpkin seeds
3 ripe mangoes, peeled and diced
2 ripe bananas, broken into chunks
1-2 Cups organic strawberries, sliced (reserve a few for garnish)
2-3 leaves of fresh mint

Soak the pitted dates in some water until soft. Add to a food processor along with the hemp seeds.
Next, process them in a food processor using the "S" blade, pulsing until it gets sticky and crumbly looking like a cobbler topping. Set aside. Now add to the processor the mango and bananas. Process until smooth like pudding. In a large parfait glass begin to layer, starting with the date, hemp mixture. Add a layer strawberries, followed by the mango, banana mixture and keep repeating the layers ending with mango banana mixture. Garnish with more date, hemp mixture, some strawberries for color and a few leaves of mint. Enjoy!

My Wally World Find

My First Young Thai Coconuts

I actually screamed out loud when I saw these at our local Wally World. I had heard that the Superstores carried them but I never would have guessed that our smaller store would too. I paid $2.98 per coconut.

Believe it or not this is the first time I have purchased a young Thai coconut. I adore fresh coconut water but have only had it from our local green Florida coconuts. Take a look at what you get from the water of a young Thai coconut. (Info compiled by John Kohler).

"It's a natural isotonic beverage, with the same level of electrolytic balance as we have in our blood. It's the fluid of life, so to speak." In fact, during the Pacific War of 1941-45, both sides in the conflict regularly used coconut water - siphoned directly from the nut - to give emergency plasma transfusions to wounded soldiers.

Most coconut water is still consumed fresh in tropical coastal areas - once exposed to air, the liquid rapidly loses most of its organoleptic and nutritional characteristics, and begins to ferment.

Coconut water contains more potassium (at about 294 mg) than most sports drinks (117 mg) and most energy drinks.

Coconut water has less sodium (25mg) where sports drinks have around 41mg and energy drinks have about 200 mg!

Coconut water has 5mg of Natural Sugars where sports and energy drinks range from 10-25mg of Altered Sugars.

Coconut water is very high in Chloride at 118mg, compared to sports drinks at about 39mg."

Here are the nutritional facts on an actual label as well as some cool products. I want the opener tool! You can see John Kohler demonstrating just how to use it in the video on this link.

 I've had raw recipes made with it but I've never bought or opened one up myself.
Here is how I opened up my coconut:
First I shaved off the husk, saran wrap intact, with my large serrated bread knife. It was recommended to leave the plastic wrap on so you won't be touching the husk as you open the coconut. It has been said that they dip the coconut husk in a anti fungal solution.
You want to shave off the husk until you see the hard inner shell.

Next I used my largest chef's knife and with the base of the blade I struck the top of the shell four times, making a square pattern.

With the final blow, I kept the knife in the coconut and then pried the top right off.
Thirdly, I strained the coconut water and was happy to see that there was 12 oz of water.
Lastly, it was time to scrape out the young meat from the shell. I simply used a spoon to do the job.

If ever you open a young Thai coconut and do not see bright white meat it may be a bad coconut. Never eat or drink from a coconut that has signs of pink, purple, or gray meat. It may have had a leak and become spoiled. Discard those, water and all. And always take a tiny sip of the water before adding it to a recipe. It should taste light and sweet.
I decided to make a simple coconut milk.

After tasting the water I added it to the Blendtec along with the coconut meat and blended till smooth and frothy.


What a luscious, living cup of deliciousness it was!  Soon I will be showing you the young Florida coconuts I got from a landscaper across the street. I'm telling you, if ever you want something don't be afraid to just ask; you never know who will say yes.

Summer Simplicity


My summer days have been filled with simple raw meals and loads of green juices, green smoothies and fresh, home grown wheat grass juice. Dishes like the one above have been how simplistic my meals have been over the past 24 days. Big bowls of fresh, juicy fruits and simple salads have been my super simple main courses. An even easier meal has been cutting a large watermelon in half, sitting down with it on my lap and scooping out all of the juicy flesh with a spoon. Half an hour later I eat the other half. Yes, I can consume an entire 10+ pound watermelon. Keep in mind that that is all I'll eat at that meal--mono meals are a favorite of mine.
So why the simplicity? I am actually on day 24 of a 30 day 100% Raw Challenge. A low fat, high carb, no salt 100% raw vegan challenge to be specific. Freelee at 30 Bananas a Day set the challenge and I was all for it. It's nice to be held accountable once in awhile to keep one focused on eating 100% raw, if that is your choice.
The challenge involves documenting online what you eat and drink each day. We also document our exercise, feelings and the amount of sleep we get each night. I must say it has been wonderful! I am exercising more than I ever have, sleeping better and loving my simple food and drink.

Easy Energy Soup


I first learned of Energy Soup when I discovered Ann Wigmore. You can read all about her in my previous post. I was fortunate enough to taste this soup for the first time when I was completing my Raw Chef certification. Even though it looks disgusting, trust me it is yummy. I fell in love with it then and I am still in love. I decided to make a very simple version of this nutritious, healing soup.

Easy Energy Soup

1 small avocado
Juice of 1 organic lemon
5 sun dried tomatoes, soaked 2 hours (reserve soak water)
1 organic vine ripe tomato
1 C baby romaine leaves
1 C broccoli sprouts
1 C sunflower greens
1 T dried onion flakes
Freshly ground black pepper to taste
Dulse flakes
Kelp flakes
Organic Raw One Rawritos Flax Crackers (These are amazing!!!)


In a high speed blender add the sun dried tomatoes, fresh tomato, onion flakes, baby romaine, broccoli sprouts, sunflower greens and some of the soak water. Blend/pulse until well mixed but still a bit chunky. Next add the avocado and lemon juice. Blend until you get the consistency you like, adding the reserved soak water as needed. Pour into a bowl and garnish with Dulse and Kelp flakes and some broccoli sprouts. Serve with Raw One Flax crackers on the side or crumble them into the soup. Enjoy!

Grateful for My Grass

Well I am now down from 4 - 2oz shots per day to 2-2oz shots per day. I was recovering from a surgery and really wanted the healing power of the grass to be in overdrive. That is why I started out doing the 2 oz shots 4 x/day. This was recommended in a couple of books, one of which was by Ann Wigmore. If anyone knows anything about wheat grass it is Ann Wigmore. Just check out this page filled with a wealth of information--this is a must read if you are curious about wheat grass or the living foods lifestyle!! It seems she started the whole wheat grass movement.

 Want info. on how wheat grass blasts cancer, read here!! Ann healed herself of cancer many years ago. Unfortunately she died in a fire in 1994. You can read a portion of her life story here.  View a rare video of Ann teaching sprouting. She did not color her hair, in fact her hair returned to her regular color after adopting the living foods diet. All of her gray was gone. She had her hair tested to prove to skeptics that it was not dyed. She is well known for her Energy Soup. Here is a video demonstrating the quantity of greens and nutrition that goes into one version of this amazing soup.
When I went up to Michigan for my Raw Chef training and certification I was fortunate enough to learn how to make this soup. We got to eat it each day as well; I love it! We also learned how to make Rejuvelac. I personally make mine with sprouted quiona vs  sprouted soft winter wheat like Ann did. Here is a video on making Rejuvelac.

I must say it is easier only doing the 2 shots. I really had to be on my toes planting and harvesting enough grass to give me the initial 4 shots. I simply do not have enough growing racks to grow that much grass effortlessly. If I had to do it again I would invest in another rack and more trays, to make it a bit easier.
