Kreamy Key Lime Dressing--Oil Free, Vegan

Today I whipped up a refreshing salad with an oil free, raw vegan dressing that reminded me of Key lime Pie! My leafy green of choice today was Wild Arugula. I love it's peppery flavor. And did you know it is loaded with Vitamins A and C and is also good source of Calcium and Vitamin K?
We harvested most of the limes off our Key lime tree this past week and I have been enjoying them in many different ways. The creamy sweet lime dressing I created today is a perfect contrast for the arugula's peppery flavor.

Sprouty Arugula and Citrus Salad

3 C of Wild Arugula (I found @ Trader Joe's)
2 C of broccoli sprouts
1 C of sunflower greens
6 small navel oranges, peeled and diced
1 small sweet white onion, diced
Rough chop the arugula and top with the broccoli sprouts, sunflower greens, oranges and onion. Drizzle on the Kreamy Keylime Dressing.

4 pitted Medjool dates, soaked in enough water to cover
Juice of 1 key lime
2 T hemp seeds
1 T diced sweet onion
Blend in blender until creamy smooth.

Eric Jr.'s Raspberry Smoothie Recipe

Each morning our 6 year old wispers in my ear which fruit he wants me to use in the morning green smoothie. He calls it, "My recipe". Today the fruit of choice was raspberry. Here is how todays recipe unfolded.

5 leaves and stems of green curly kale, organic
1 navel orange, organic
1 C water
1 C ice
6 bananas
1 bag of frozen organic raspberries
In a high speed blender blend until thick and smooth. Enjoy!

Raspberry Salad Dressing 811 Style


Raspberry Salad Dressing or Fruit Dip

6 oz fresh organic raspberries
2 soaked and pitted Medjool dates
juice of 1 key lime
juice of 1 orange
3 baby green zucchini

In a personal sized blender, blend until creamy smooth.

 Enjoy on any green salad or even use as a fruit dip or drizzle.


 Here is how I enjoyed this amazing dressing/drizzle. I topped my 4 large mangoes with it--oh man is it gooooood!!!

Florida Coconuts and a Raw Soup


In a previous post I hacked into my first young Thai coconut and said I'd share a post about some local green coconuts I was fortunate enough to get. Effortless foraging for this coconut involved watching the tree trimmers cut down the neighbor's coconuts and then mustering up enough courage to ask the man for 6 coconuts.

I used a hacksaw to saw off the stem, then I hammered a screw driver into the top.

Turned it upside down over a strainer and decided to use the coconut water in a simple 4 ingredient raw soup.

Raw Cucumber Soup

Water from 1 green Florida coconut (or young Thai)
1 large cucumber
1 sprig of fresh dill
2-3 soaked and pitted Medjool dates
Blend all of the ingredients in a blender and enjoy!
You can imagine how wonderful this tasted on a hot and humid summer day.

Blueberry Nectarine Salad


I am enjoying organic nectarines like crazy! They are so wonderful when eaten either alone as a mono meal (5 or more!) or with simple ingredients like celery, sunflower greens and organic blueberries with some fresh squeezed OJ on top, as shown in the picture above.

 

I love eating my mid day meal out in the sun on our upper deck. Normally my serving would be twice this size but I ate three of the nectarines before I could assemble this salad!!

I recently discovered a simple, creamy, nectarine dressing using:

  • 2 organic nectarines

  • 4 Brazil nuts

  • small amount of fresh ginger

  •

Raw Baby Broccoli Salad


I found a beautiful bunch of organic baby broccoli at Trader Joes and just had to get busy creating a recipe around it. This is a very simple recipe using minimal ingredients....just the way I like raw recipes when time is short. It is a sweet and tangy salad that made a wonderful meal.

Baby Broccoli Salad

1 package of organic baby broccoli, chopped stems and all
1 organic red pepper, diced
1 organic Vadalia onion, sliced thin and diced
1/3 C organic raisins
Marinade:
1/4 C Coconut Vinegar
1 T First Cold Pressed EVOO
1 Tsp pure organic maple syrup (optional) or use date paste
1 tsp organic stone ground mustard
Combine the marinade ingredients and pour over vegetables and raisins. Cover and marinate over night. Enjoy on top of a bed of your favorite lettuce!

Undressed Mache Salad

I have a new favorite green, Mache (lambs lettuce). I tried it for the first time this month and I am hooked. I bought a bag at Trader Joes and originally used it in our smoothies but this time I made a fabulous salad. I have been eating some of my salads dressing free. Instead I try to spritz on fresh citrus juices or chopped herbs.
I might try growing Mache this Fall. Here is a page that tells you how.

Mache lettuce (Lamb's Lettuce)
Romaine lettuce, chopped
Shredded white cabbage
Hothouse cucumber, sliced
1/2 yellow pepper, sliced
1/2 orange pepper, sliced
1 grapefruit, peeled and diced
Juice of 1/2 a lime
Raisins
Dried cranberries
1 tsp Hemp seeds

Workout Water

Workout Water

Not only do I begin each day with a large glass of lemon or lime water but I also chug another one after my work outs that is a bit different. Here is a work out water that will quench any thirst. The trick is making an infused water. You can use any fruit you'd like. This one has lemon and cucumber sliced very thin. I have also had pineapple, watermelon, orange and mint infused waters. Use your imagination, the possibilities are endless. Start with a large glass jar and fill with filtered or spring water. Add your fruit or fruits of choice and allow to infuse for several hours. Enjoy your flavored water throughout the day. Fresh is best, it tends to get bitter by day two so discard any leftovers and start fresh the next day.

Start your day with Lemon Water

Many of us already know the benefits of drinking plenty of water and proper hydration, but with the simple addition of fresh lemon juice you may have yourself a very healing beverage.

I recommend that many of my patients begin each day...first thing in the morning...before any other food or drink with a glass of lemon water. Why lemon water you may ask?

The benefits are remarkable:
  • After a nights sleep the lemon water provides an ideal flush to the body's systems...digestive, circulatory and elimination.
  • The lemon juice in particular is a great cleanser and purifier of blood, liver and kidney's.
  • Lemon juice (although acidic in nature) is anionic and therefore produces an alkalizing effect on the body. This is important because the more alkaline your body is, the healthier it is. Disease states only occur when the body pH is acidic. Being alkaline also helps further the detoxification processes.
  • Lemon juice is a great source of Vitamin C: supports immune function. Calcium, Phosphorus, Iron and B-vitamins are also in lemon juice
  • Lemon juice supports digestive function and can relieve conditions such as heartburn, indigestion, flatulence diarrhea and constipation.




By simply drinking a glass or warm or hot lemon water you can shift your body in to a better state of health and in the end...prevent many future illnesses. And isn't that what medicine should really be about prevention?

Lime and lemon add refreshing zest to almost any drink which cleanse and enhance immune properties of your already healthy glass of juice.

Nutritional Benefits

The nutritional benefits of limes do not differ very much from those of lemons. They are both excellent sources of vitamin C, B6, potassium, folic acid, flavonoids and the outstanding phytochemical, limonene.

Limonene have anti-cancer effects and help increase the level of enzymes that detoxify carcinogens.

Health Benefits

Limes and lemons contain outstanding phytochemicals that are high in anti-oxidant and anti-cancer properties. They are potent detoxifiers with anti-biotic effect that is protective against bacterial poisoning.

Asthma: Take a tablespoon of lemon juice at least one hour before each meal to relieve asthma.

Burning soles/feet: Rub a sliced lemon over the burning sole/foot/heel to relieve from pain and for toxin elimination through the pores of the feet.

Cold: The anti-viral properties in lime/lemon fight infections and halt the progress of a cold. Take the juice of two lemons in half a liter of hot water and add honey to taste. Sip it slowly before bedtime.

Constipation: Drink a glass of warm water every morning with some lime/lemon. Stir in a pinch of cinnamon powder. This will help your body to detoxify and relieve constipation.

Digestion: Lime/lemon juice has amazing digestive qualities that are very similar to our digestive enzymes. Thus it is effectively helps with digestion and relieves bloating and belching.

Feet, tired: After a long day on your feet, soak your feet in very warm water containing lime/lemon juice to enjoy the cooling, astringent feeling. This will also help promote deep sleep due to the relaxing action on the foot nerves.

Gums, swollen: Drink a glass of diluted fresh lime juice with a pinch of sea salt to relieve the pain of swollen gums. Use the rind from the squeezed lime and rub on the gums.

Heartburn: Add two teaspoon of lime/lemon juice into a glass of warm water and drink to relieve heartburn.

Inflammatory disorders: Even though lime/lemon juice are sour and taste acidic, it is actually very alkalizing in the body and is highly effective in the treatment of inflammatory disorders like rheumatism, arthritis, sciatica, etc. It also prevents the deposit of uric acid in the tissues, thus reducing the risks of gout.

Skin, dry: Rub the peel of a lemon on dry or scaly skin to restore softness and add moisture to the skin.

Sore throat: Mix one part lemon juice with one part water. Gargle frequently and feel its soothing effect on the throat. You may also add in a pinch of sea salt for added effect.

Consumption Tips: The highest content of limonene is found in the white spongy inner parts of the lemon. When juicing a lemon, put in the whole fruit together with the peel, to get the most nutrition out of it (be sure to wash and brush the dirt off the skin before doing so.)

Make it a habit to put in cut limes/lemons (together with peel) into your drinking water or juices, to enjoy all its medicinal properties. With lemon juice in your drink, the absorb ability of the other nutrients in your drink is increased up to five times!

Tip: Juice a glass of either lime or lemon juice and make ice cubes out of it. When you have a drink, pop a few lime/lemon cubes into your drink for a refreshing taste while enjoying its immense health benefits.

Limes and lemons can be stored in the fridge for up to two weeks. Although they can actually keep longer, it will soon lose its flavor after too long.

When buying lemons, look at the stem end of the lemon. There should be about four or five little lines radiating out of the stem. The greater the number of these lines, the higher the mineral content of the lemon.

Caution:
Despite all the goodness that limes/lemons provide as mentioned above, remember always to take only in moderation. More is not always better.

Some people are allergic to citrus peels, so when you take lime/lemon juice extracted together with the peel, check yourself to see if there is any allergic reaction afterwards.

Greens and Fruit

I know greens and fruit should not be mixed, according to the "Food Combining Police", but I mix them daily. I just cannot imagine not; how else would I make a green smoothie?
I put together a massive bowl of greens and topped it with some soaked raisins and a diced Pink Lady apple. The dressing couldn't be easier, the juice of 1 navel orange.

4 large leaves of organic romaine, sliced into thin ribbons
1/2 a bunch of organic parsley, fine chopped stems and all
2 Cups wild arugula, rough chop
1/2 Cup sunflower greens
1/2 Cup broccoli sprouts
1/4 Cup organic raisins, soaked for 20 min., rinse and drain
1 large organic Pink Lady apple, diced

Dressing: The juice of 1 navel orange
