RAW Confetti Salad

Yesterday I was really in the mood for some tabouli but of course I don't eat bulger wheat and I had zero mint in the house, so I took what I had on hand and made my version of tabouli, substituting cauliflower for the bulger and parsley for the mint. But since it isn't really much like tabouli I called it Raw Confetti Salad instead, because when I looked at the end result it looked like a party in a bowl!!! And trust me, it tasted like a party in my mouth! You gotta try this easy and nutritious salad for yourself.

RAW Confetti Salad (salt-free, oil-free, lowfat)

1/2 a head of raw cauliflower, finely choped in a food processor or by hand

1 large cucumber, finely diced

1/2 of a large organic bell pepper, finely diced

1 T of raw sunflower seeds, soaked for 2 hrs/drain off soak water, chop

2 ripe Roma tomatoes, diced fine

3 Cups fresh parsley, finely chopped

juice of 1 orange

juice of 1/2 a lemon

juice of 1/2 a lime

1 T of Mrs. Dash "tomato basil garlic" salt free seasoning blend (optional)

Mix all of the chopped vegetables and the sunflower seeds in a large bowl. Combine the juice from the orange, lemon, and lime with the Mrs. Dash and pour over salad, mix well and ENJOY!

Ah, my beautiful friend!!! I was so suprised to see a comment from you here!! Thanks for writing one. I was just thinking about you yesterday when I was outside getting some sun on me, listening to the radio, and "You Dropped the Bomb on Me" started playing. I think the neighbors thought I was nuts as I was singing the lyrics out loud. And you know how in tune I can sing!!??
What I usually do on blogs that do not have the printer friendly button is just highlight the recipes I want and then paste them into my email and then print. I'll send it to you though.
I'm going to check my blogger tools and see if I can add a function for that. Thanks for the idea!!

Thanks sweetie!! I wish you much success w/ the garden. Can't wait to see pictures!!
By the way, I looked at how happy the avocado baby trees look in my compost pile and was thinking maybe they'd grow best right there!! Perhaps I wont transplant them?? Only problem is not much sun get there. We'll see.
