Cara Cara Bok Choy Salad

The children have been loving the Cara Caras lately. We go through two bags in just a few days. We have also been buying a ton of other citrus; enjoying citrus season down here in SW FL.
I was craving bok choy yesterday and thought up a simple recipe that incorporated both the bok choy and the Cara Cara. I thought they would taste great together with perhaps some fresh cilantro a few sweet dates too.

I was right! The cilantro added that extra bit of flavor and the dates lent a subtle sweetness, making this salad explode in your mouth with freshness.

Cara Cara Bok Choy Salad

4 heads baby bok choy, chopped

1 organic red pepper, diced

2-3 Car Cara oranges, peeled and diced

4 Medjool dates, remove pits and chop

1/2 C fresh cilantro, chopped

Toss everything in a bowl and enjoy!
