Sunny Salad Bowl

Crystal blue skies this morning in SW Florida, the air is crisp and the smell is sweet. I had to fill up on some sunshine this morning and this was the perfect dish to do just that! I was blessed once again to receive fresh, tree ripe, Florida pummelos from our dear friends Dr. & Mrs. "F". Thanks guys!! You are so wonderful. Well this time I hit THE PUMMELO LOAD-- the mother load of pummelo. Seven of them are missing from the picture, I already ate those :) Mother Load of Pummelo Sunny Salad Bowl 2 pummelos, peeled and sliced/diced handful of sunflower sprouts (my own :) handful of organic raisins drizzle of RAW honey sprinkling of pumpkin seed powder (ground in nut chopper) These citrus fruits are sooo juicy, you will be left with a delicious juice in the bottom of the bowl. Asian Citrus Salad

Today's lunch inspiration came from a vegan magazine titled "Healing Foods". It had a lot of cooked foods in it and only a few salads so I opted not to buy it. I was happy to see an article on sea vegetables, but the recipes were for using it cooked. I eat my sea vegetable raw so all of their vital nutrients are intact. I was a bit baffled with the title, "Healing Foods" since the majority of the foods were cooked??  But I did take the time to make note of a fantastic looking salad. I changed it a bit and love how it tasted. I really like that the dressing is oil free. The original recipe called for arugula but I used mixed baby greens. It also called for shallots but I only had one scallion left so I substituted that instead. I also added a pummelo and a clementine in addition to the grapefruit and orange that it called for. Loving My Pummelos

Chinese Cabbage and Carrot Slaw I am enjoying my pummelos so much right now that I had to figure out a way to incorporate one into a recipe using the organic Chinese Cabbage I have from this weeks produce pick up.  I decided to make a very simple cabbage and carrot slaw dressed with one of my favorite raw dressings; it is more of a mustard vinaigrette. Topping the slaw is one large pummelo and a handful of dried cranberries (unsweetened but infused with apple juice). See how I peel these very seedy citrus fruits here . Pummelo Cabbage and Carrot Slaw 1 Pummelo (or grapefruit) peeled and diced 1/4 of a Chinese Cabbage, shredded 2 small carrots, shredded Handful of dried, unsweetened cranberries Dijon Vinaigrette Dressing Organic Dijon mustard Coconut vinegar EVOO cold pressed Fresh lime juice Raw honey, warm gently to liquefy Shake dressing ingredients in a glass jar with tight fitting lid. How to Cut a Pummelo

                  Gift from a Sweet Friend, a Bowl Full of Pummelos! What is a pummelo you ask?? Well, I have posted previously about this wonderful citrus. How does one eat such a fruit you ask? Well, they are LOADED with seeds. You have to cut them a certain way to avoid all of the seeds. This is the way I do it and it works great! They are very refreshing to me in the morning and really make me feel good. I usually like a sweeter salad early in the day versus a savory. I make many variations of these  pummelo salads. When pummelos are in season I am fortunate enough to have some very dear friends who share them with me. They have a large tree in their yard and they bring me pumelos often. It is such a treat and I adore them. I actually prefer pummelos to grapefruit. Here is a simple morning salad that you can of course enjoy any time of day. If you do not have access to pummelos just use a really good grapefruit!
