Raw Mushroom Pate

The other day I went to the Asian Market, as I mentioned in the previous post, and I was lucky to find some beautiful, fresh Shitake mushrooms. I had a small carton of button mushrooms in the refrig already and thought that combining the two would make for a wonderful Raw Mushroom Pate. Here are the ingredients and  how I put it all together: Raw Mushroom Pate by Elizabeth @rawlivingandlearning.blogspot.com 3 Cups of finely diced Shitake and white button mushrooms 4 leaves of fresh basil 1 Tbsp of low sodium Tamari diluted in 2 Tbsp water 1/4 Cup of raw sunflower seeds, soaked and dried 1/2 Tbsp dried onion flakes 1/2 tsp Italian spices 1 tsp coconut vinegar 1 small tomato cut into thin strips 1 small carrot spiralized collard leaves as the wraps I began by preparing the ingredients. So my new friend on Instagram, Tanya @tannyraw, did a video on this great gadget. We both bought ours at Bed Bath & Beyond. I used one of my $5.00 off coupons and got this gizmo for mighty cheap. You see my original spiralizer broke about a year ago and I have been whining about it and decided to finally replace it with this little guy.  I was thinking how easy it will be to pack it along with my travel blender and juicer when we travel. The first veggie I experimented with was carrot. Just look at the noodles this thing made out of just 1 small carrot!!! I added them to my killer kale salad yesterday and enjoyed this deliciousness for lunch, in the sunshine. The next veggie I experimented with was a green zucchini. Raw Spaghetti---Ahhhhh, My Spiralizer Broke!

Raw Spaghetti Five Simple Ingredients Five simple ingredients make up this super simple raw spaghetti recipe. I am sad to say that shortly after making this the lever on my spiralizer broke. It slipped out of my hand and crashed onto the counter top...oops.  Mine is 2 1/2 years old and I use it like crazy! Looks like I'll be shopping for a new one. The first step is to spiralize your zucchini into pasta noodles. Cut one medium sized zucchini in half , trimming each end flat and place one half on the spiralizer.  Place the lid on, turn the handle.... And look, instant raw pasta. For the sauce, place the tomatoes, garlic, orange and parsley into a food processor. Pulse several times until you achieve the consistency desired. Simple Herb Garden Pesto

Oil Free Pesto Sauce Today I was in the mood for pesto. I had a perfect little organic zucchini waiting to be spiralized into some raw noodles and I have pots full of herbs right out the back door, on our upper deck. I put the two together and came up with the most delicious oil free pesto sauce. It is loaded with nutrition and enzymes. I love how each and every herb shined through in the finished product. With each bite I would taste a hint of the lemon balm, sunflower greens, oregano, parsley and basil. It was like an herb party in my mouth. I added the grape tomatoes for color and sprinkled on some black sesame seeds for contrast. After I took the final picture I threw on some of my homegrown fenugreek sprouts and a handful of raw sunflower seeds for a little crunch. Here is my recipe, hope you enjoy making it! Raw Noodles Two Ways

Tonight's dinner was a wonderfully light yet satisfying meal. Spiralized green zucchini noodles loaded with fresh veggies and parsley. I tossed it with a light vinaigrette that everyone enjoyed . Raw Zucchini Noodles with Vinaigrette Here is my recipe : 3 small green zucchini, spiralized into noodles 1/4 of a sweet onion, diced 4 baby Bella mushrooms, diced handful of fresh parsley, chopped 8 grape tomatoes, diced Gently toss the noodles and vegetables together. Drizzle with the following vinaigrette: Elizabeth's Favorite Vinaigrette 1/4 C First Cold Pressed Olive Oil 2 T Rice Vinegar 1 T Dijon mustard 1 T raw honey dash of cumin dash of dried basil 1 small clove garlic pressed 1 tsp finely grated fresh ginger Whisk together in a small bowl or shake well in a glass jar with tight fitting lid. RAW Pasta Salad

Zucchini Pasta Salad Here is a delightful zucchini pasta dish that I just loved. I am having so much fun with my new spiralizer ! I only like eating raw zucchini when it has been spiralized. It somehow changes the texture for the better. It really feels like you are eating noodles. I am in love with this dressing and had to find another recipe to use it on. Here it is: Zucchini Pasta Salad with Balsamic Dijon Dressing 1 organic green zucchini, spiralized into long thin noodles 1 organic orange bell pepper, sliced 3 scallions, sliced 2 Roma tomatoes, diced Fresh organic basil leaves, sliced Directions: Spiralize the zucchini and place on serving plate. Top the zucchini with the pepper, tomatoes, scallions and fresh basil. Drizzle on the Balsamic Dijon Dressing. Enjoy! I Got It, My Spiralizer, Finally!!

One of my birthday gifts from my sweet, sweet husband was a spiralizer !!!! YEAH! I finally can make zucchini noodles the right way. He also got me a white ceramic counter top compost pail. I LOVE it. It looks good and it holds a lot of scraps. I am amazed at how much good compost stuff we have been collecting. Now I need a bigger compost bin out in the backyard. I am getting ready to plant my gardens. Sounds strange doesn't it?? Most of the other states are harvesting the last of their produce and down here in SW Florida it is planting season!! I have quite a bit of soil in the compost bin out back and I look forward to custom blending my soil for my two square foot gardens. Let's just hope I can keep the neighborhood rabbits away from my greens. The very first raw dish I made with my new spiralizer was pasta and sauce, RAW style of course.
