Raw Vegan Spring Rolls

RAW VEGAN SPRING ROLLS By Elizabeth www.rawlivingandlearning.blogspot.com Yesterday was another fun day of creating raw, vegan recipes. I was determined to make an alternative to rice paper wrappers when making spring rolls. The texture of this raw, red cabbage is amazing! I couldn’t be happier with how they turned out. It is a simple two step recipe to tenderize the red cabbage all the while preserving the essential enzymes and nutrients that raw cabbage possesses. The many health benefits of raw cabbage motivates me to always try and eat it uncooked. But sometimes I prefer it soft vs crunchy, and here is the perfect way to enjoy it.  The first step was to cut out the tough core at the bottom of the cabbage. I then cut about a third of one side off so I could more easily separate the cabbage leaves. Next I placed 7 cabbage leaves in a square glass dish and filled it with water. Sunset RAW Stuffed Peppers

I was given an incredible gift from Sunset Grown this past Saturday. On my doorstep was a large box filled with these gems!!!!!     They sent me this beautiful package just because I tell the truth about them on Instagram and share with my viewers how much I love and enjoy their phenomenal produce. If you are not familiar with this company and the procedures they use to grow their amazing produce, visit their web site to read all about them.   When I was unpacking the box and saw the gorgeous sweet peppers I just knew I had to make some Raw Stuffed Peppers. I used my Pumpkin Seed Pate recipe as my filling and served them on a bed of my homegrown sunflower greens. Vegan Sorbet

One of my little guys wanted some homemade Sorbet today. He requested pineapple to be exact. So I whipped up this easy recipe in my Blendtec blender and he was very pleased. Three ingredients and some ice is all you'll need for this tasty recipe. Pineapple Sorbet (vegan, sugar free, gluten free) By rawlivingandlearning.blogspot.com Yields 1serving 1 cup of frozen pineapple   1/4 cup of fresh coconut milk   1/2 of a frozen banana   1/3 cup of ice cubes   Allow frozen fruit to sit at room temp. For about 5-8 minutes to slightly soften. Then blend all of the ingredients in a high speed blender or food processor until the consistency of sorbet. Smokey Stuffed Peppers

The other day I found a beautiful, deep red, organic bell pepper and knew I had to make something extra special with this beauty. Originally I thought of making a dip and then using the pepper slices and some cucumbers in it, but decided instead to stuff it with a smokey filling. Here is how I put it together: Smokey Stuffed Peppers by rawlivingandlearning.BlogSpot.com The Filling 1 Roma tomato 1/2 of a small, organic, green zucchini 1 stalk of organic celery 1/2 of an organic sweet onion 1/2 of a very small Haas avocado 1/4 tsp of smoked paprika In a food processor or blender, pulse the first 4 ingredients. Then add the avocado and paprika and process to desired consistency. I made mine quite smooth. To assemble: Cut the bell pepper in half and remove all seeds and white ribs. Fill each half with the filling and garnish with broccoli sprouts. Serve with a side of lettuce and cucumbers to clean up any filling that spills from peppers when you cut them!!! ...

Saucy Tomatoes

Yesterday on Instagram I posted a picture of my Saucy Tomatoes and promised I'd share my recipe on the blog. The sauce is so simple, only 3 ingredients and 2 "spices". The key to this wonderful recipe is the tomatoes. You want to select big, juicy, ripe tomatoes. Fat Boy tomatoes or Ugly Ripe Tomatoes are a good choice; Beefsteak Tomatoes would be nice as well. Saucy Tomatoes by Elizabeth @rawlivingandlearning.BlogSpot.com   1 ripe Haas avocado juice of 1 lime 4 sundried tomatoes (sulfite free) 1/2 Tablespoon of dill 1/2 Teaspoon of dried onion flakes   In a high speed blender, or small food processor, blend until creamy and thick. Add drops of water slowly if sauce initially is too thick. Slice your tomatoes into rounds and top with some sauce. Garnish with sprouts and basil. Makes enough sauce for 6 large tomato rounds.
