Famous Pineapple Mango Salsa from CHI

Creative Health Institute has some mighty amazing raw recipes, as I posted about in my last entry, and this one is at the top of my favorites list! The combination of pineapple and mango with a hint of heat (I added red pepper flakes) is amazing served in a creamy, ripe, avocado boat. And of course it would be fantastic served with some raw corn chips--wish I had some! Famous Pineapple Mango Salsa from Creative Health Institute 2 C diced raw pineapple 2 C diced, organic, raw mango 1/4  organic red bell pepper 1/4 organic orange bell pepper 1/4 organic red onion, diced 1/4 C fresh cilantro, finely chopped 2 organic limes, juiced (I used key limes from our tree) S and P to taste (I omitted) **I added a good sized pinch of red pepper flakes DIRECTIONS: Stir together all ingredients, pour into a serving dish. Creative Health Institute- Day 3 Advanced Raw CHef Training

Finally I can post about Day 3 and our graduation. I have been away from blogging because we had to get ready for a 5 night/ six day trip to the homeschool convention up in Orlando so I have not been able to get anywhere near blogger for several days now. I tend to only focus on a few things at a time or I get overwhelmed and grumpy. So my focus the last several days has been on the kiddos and our homeschool convention. We had a great time, but traveling raw and with kids who are gluten free/dairy free and high raw, is always a great challenge. Will post about that later. Day 3 at CHI Sunday, May 1, 2011 Breakfast was served at 8AM. Advanced Raw Chef Level 1: Training and Certification

PEACE in P-E-N-A-N-C-E and My Raw Lenten Journey

There is PEACE in P-E-N-A-N-C-E . (Can you find it?) It is so easy for me personally, to find true peace in penance because I trust that God's mercy abounds. It is during this time that we prepare to renew our baptismal vows through penance and reconciliation. This is a time to enter into the healing spirit of this season and restore relationships with our household, neighbors and most importantly, God. It can also be a time to heal the body with raw living, life giving foods. When I think of this time of year not only do I think of fasting, abstinence and penance but I think of reconciliation and NEW LIFE. The word "lent" comes from the Anglo-Saxon word for springtime, lencten. The importance of the integrity of life and the preciousness of life. Life represented in new growth and life being protected from the moment of conception to the moment of natural death. And life as seen in the planting, sprouting and growing of life giving plants, nuts and seeds.
