Creamy Dill Dressing/Dip (raw, vegan)

I've been posting like crazy on Instagram and forget to re-post my recipes on the blog. Well my focus this new year is to stay committed to my blog as well as Instagram because I get so much joy from both. I have found wonderful friends in both places and hope to continue finding interesting and loving people via these outlets. I wanted to share a delicious 3-ingredient raw salad dressing with you. It also has a few spices but you get the point, it's super quick to make and super delicious. I tossed mine over a large bowl of romaine, tomato, carrots, and mushrooms.  You could even use less water and keep it thick for a vegetable dip. Saucy Tomatoes

Yesterday on Instagram I posted a picture of my Saucy Tomatoes and promised I'd share my recipe on the blog. The sauce is so simple, only 3 ingredients and 2 "spices". The key to this wonderful recipe is the tomatoes. You want to select big, juicy, ripe tomatoes. Fat Boy tomatoes or Ugly Ripe Tomatoes are a good choice; Beefsteak Tomatoes would be nice as well. Saucy Tomatoes by Elizabeth @rawlivingandlearning.BlogSpot.com   1 ripe Haas avocado juice of 1 lime 4 sundried tomatoes (sulfite free) 1/2 Tablespoon of dill 1/2 Teaspoon of dried onion flakes   In a high speed blender, or small food processor, blend until creamy and thick. Add drops of water slowly if sauce initially is too thick. Slice your tomatoes into rounds and top with some sauce. Garnish with sprouts and basil. Makes enough sauce for 6 large tomato rounds. RAW Spinach Dip

I love it when recipes just pop into my head and love it even more when they taste amazing!!!! Since fresh corn is easy to find during the summer I am always looking for an excuse to use raw, organic corn in recipes. I just wish the fresh organic corn wasn't so expensive though. Once you try corn raw I guarantee you'll hesitate cooking it in the future. It is just that good!!! I put together some simple ingredients, raw corn being one of them, and came up with this RAW Spinach Dip. The secret ingredient is Smoked Paprika! RAW Spinach Dip by Elizabeth @rawlivingandlearning.blogspot.com 1/3 cup raw baby spinach, organic 1/2 of a small Haas avocado 2 T sweet onion, organic 1/4 cup raw corn, organic 1 T fresh lemon juice 1 tsp smoked paprika Combine all of the ingredients together in a small food processor and pulse until desired consistency. RAW Vegan Sushi Wraps

In my previous post I said I would share my recipe for these yummy vegan sushi wraps. They are as simple as cutting, smashing, spreading and rolling. To start I finely sliced some organic white cabbage, diced an organic sweet onion and smashed a clove or two of garlic.    The next step is to smash one small Haas avocado with the fresh garlic, using the back of a fork. This will be the spread for the Nori sheets. We have organic Nori at the local Whole Foods but I prefer to order Raw Nori wraps on-line. Here are the ones I have to buy locally when I run out of my raw wraps. Take a sheet of Nori and spread on a thin layer of the avocado and garlic. Now the fun begins, just start piling on your favorite toppings. Lemon Herb Sauce

It is a beautiful, sunny, and hot day here in the SW of FL. I am sending warm thoughts to all of you who are still experiencing winter type weather. Today's lunch came together beautifully. I have been wanting to create an oil free, raw, creamy sauce for zucchini noodles for several weeks now and today was the day to make it happen. This creamy sauce is so bright with lemon and herb flavor it is truly an explosion of tastes! Each bite is slightly different as you taste the Greek Oregano, basil, and lemon balm. So simple, so delicious and bursting with raw, living energy. Lemon Avocado Sauce with Herbs I topped some zucchini noodles and diced baby bella mushrooms with this delightful sauce. Right before eating it I decided to add some fresh ground black pepper. Basic Avocado Salad The other day I just wanted something really basic and easy for dinner. This salad hit the spot and was very satisfying too. I have been able to get the most wonderful avocados lately. I try to only eat one per week or one every two weeks even. Then there are times that I will go months without wanting any. Funny. Here is my simple yet tasty recipe. Enjoy! Basic Avocado Salad 1 organic avocado, diced 1/4 of a red onion, diced 6-8 grape tomatoes, cut in half handful of cilantro, chopped lemon basil, chopped 2 C sunflower sprouts 3 T First cold pressed EVOO 1 T Bragg's Apple Cider Vinegar juice from half of a lime Put the sunflower sprouts on a plate. Top them with the vegetables and fresh herbs. Prepare the dressing by whisking together the EVOO , vinegar and lime juice. Pour dressing over salad. Carob Puddding

Last night I decided to have a rich, spur of the moment dessert. I decided to make Raw Carob Pudding. This is one of those raw recipes that you'll either "love it" or "leave it". I just happen to love it. It is so filling you could even have this as your breakfast meal. Raw Carob Pudding 1 ripe organic banana, cut up 1 organic avocado, scoop it out of the skin  1 T raw honey 4 Deglet dates, soaked 30 min if too firm  1/4 C raw carob powder, add more or less for your taste pinch of sea salt 1 tsp fresh lemon juice hemp seeds Directions: Put banana, avocado, lemon juice, honey, dates, raw carob, and sea salt into a small food processor. Process till smooth and creamy. Put into a bowl and top w/ some hemp seeds. Enjoy in good health!
