Dehydrated Mushroom Burger The next step in my transition last year was to finally break down and buy a dehydrator. I really wanted to be able to dry my raw nuts after having soaked them as directed. And the thought of making raw cookies and raw crackers was very enticing. I am so glad that I made the investment. I purchased the 5-tray Excalibur . I have used it a great deal and couldn't imagine not having one; it makes living this lifestyle a breeze. I can have everything I need on hand and whip up any recipe I desire. There are so many things I have yet to make in the dehydrator that I don't think I'll ever get bored with recipes. I've mentioned before how much I love Lisa's blog, Raw on $10 a Day (or Less!) and here is her mushroom burger recipe. I think it turned out great! The batch I made gave me 4 burgers. I put too many red pepper flakes in so mine were on the spicy side. I ate mine on a bed of organic spinach and then smothered it with slightly dehydrated...

This past week has been all about my children. One can truly be humbled when they put others first. I get such joy caring for my family and having the privilege of teaching our five children at home. This past week was filled with new books arriving daily, lesson plans being written, school work being completed, grading papers, field trips being planned (I am our homeschool groups Field Trip Coordinator this year), running to classes out of the home, and just trying to settle into our new routine. Transforming Leftover Pad Thai

Yesterday I posted my Pad Thai recipe and thought I would have enough leftovers for one more lunch. Well, as it turned out I had enough leftovers for three more lunches. I decided to take the majority of the plain "noodles" and use them in a bread recipe. I didn't have a bread recipe, using these specific ingredients, so I made one up! Have you heard of a raw bread recipe yet with kelp noodles in it?? Well you soon will have one. I added in some fresh raw baby spinach and several other things. I didn't want to call it Sea Weed Bread so I settled on Spinach and Mixed Vegetable Bread.         Ready for the Excalibur Dehydrator Oh my, I really surprised myself. When I tasted the dough after adding in all of my herbs and spices, it was so good I was tempted to put some in a bowl and eat it like pudding. Stuffed Portobellos with Herbed Nut Cheese

For this dish I was inspired by two recipes from The Raw Transformation . The Raw Transformation First I marinated my portobellos for six hours in the following marinade: Marinade 1/2 C first cold pressed EVOO 1/4 C fresh lemon juice 1/2 C filtered water 1 tsp grated ginger 2 cloves garlic, pressed 1 T Tamari Mushrooms Marinating...Gettin H appy :) While the mushrooms were doing their thing I started making my Herbed Nut Cheese. Quick and Easy Tabbouleh and a Book Review

It is time to do a formal review of a book I was lucky enough to find at our local library. The title is, " Everyday Raw", by Matthew Kenney . I have already posted recipes from his book and I really like everything that I have prepared so far. But now I would like to share my review of his book and also feature another one of his recipes, TABBOULEH. The funny thing about this recipe is that he uses a sprouted grain, quinoa, that he didn't actually sprout. He doesn't personally advocate the use of sprouted grains, although they are technically raw, because he has a hard time digesting them and he doesn't think they are pleasant to eat. I disagree. I think everyone has to decide for themselves of course, but I love sprouted grains and do not have a problem digesting them. Raw Sprouted Wheat Berry Bread

Sprouted Wheat Berries Here you can see the bread triangles with dollops of raw honey . I purchased my Excalibur Dehydrator  one and a half months ago and made my first raw bread. It turned out really good and I look forward to making it again but with a few additions. The bread I made here was a slightly sweet version. I hope to make a more savory version next. By the way, I love my dehydrator. So far I have used it for buckwheat krispies, tomatoes, raw sprouted bread, stuffed mushrooms, and pepper corn crackers. Here is how to make the raw sprouted bread: Soak 2 cups of wheat berries overnight. In the morning rinse the berries very well and drain. Let berries sprout in a glass jar for 2 days. Each day you must rinse them off and drain well about every 6 hours. This is the same technique that I described in a previous sprouting post. I reuse large glass jars from applesauce or spaghetti sauce. I cut screen material into squares and rubber band it around the n...
