RAW VEGAN SPRING ROLLS By Elizabeth www.rawlivingandlearning.blogspot.com Yesterday was another fun day of creating raw, vegan recipes. I was determined to make an alternative to rice paper wrappers when making spring rolls. The texture of this raw, red cabbage is amazing! I couldn’t be happier with how they turned out. It is a simple two step recipe to tenderize the red cabbage all the while preserving the essential enzymes and nutrients that raw cabbage possesses. The many health benefits of raw cabbage motivates me to always try and eat it uncooked. But sometimes I prefer it soft vs crunchy, and here is the perfect way to enjoy it.  The first step was to cut out the tough core at the bottom of the cabbage. Raw Corn Chips (Lowfat, Salt Free, Oil Free)

I have been juicing a lot of carrots lately and am left with a lot of carrot pulp! I've been trying to think of recipes that utilize the pulp instead of having to just compost it all. The other day I decided to make Raw Carrot Corn Chips in the dehydrator. They turned out fantastic! Thin, crispy, and approved by all of the family members that tasted them. I am a happy camper! Raw Carrot Corn Chips by Elizabeth @rawlivingandlearning.BlogSpot.com 4 Cups of organic corn 4 Cups of carrot pulp 1/3 cup of flax seeds, ground into flax meal 2 Mini yellow bell peppers 1/3 of a sweet onion 3/4 cup of water Pinch of chili powder Pinch of cumin In a food processor, process all of the ingredients into a thick batter; Should be the consistency of thin oatmeal. Those of us that juice regularly are faced with the decision of composting our remaining pulp after juicing or saving it and turning it into a yummy raw recipe. In our house we make a lot of carrot juice so I always have loads of carrot pulp on hand. I store it in freezer bags in the freezer so I can use it anytime that I need to make a raw bread or raw cookies. This week I decided to make some Raw Onion Flat Bread. Here is my recipe: Raw Onion Flat Bread by Elizabeth @rawlivingandlearning.BlogSpot.com 4 Cups of carrot pulp 2-3 sweet onions, sliced thin 1/2 Cup water 4 Tablespoons of raw flax seeds, freshly ground 1/4 of a raw green zucchini, process in food processor until almost liquified Dill weed to taste Dried Italian spices to taste Pinch of sea salt (optional) Combine all of the ingredients in a large mixing bowl, stirring very well until a "dough" forms. Banana Chocolate Oatmeal Cookies Wait until you read the super charged ingredients in these little cookies. I was playing around in the kitchen today with new recipes and wanted to make an extremely nutritious cookie for the children, and hubby too. You can easily make these totally raw by purchasing raw oats. I just used really good organic oats today. Grind the raw oats to make the oat flour that I refer to in the recipe. I got out a big bowl, opened up the pantry and literally made this recipe up as I added each ingredient. I just threw in what ever I thought would taste good together and here is the result. You can make these two ways like I did. Keep some of them cold in the fridge and dehydrate the rest till desired texture; store those in an airtight container on the counter.
