Saucy Tomatoes

Yesterday on Instagram I posted a picture of my Saucy Tomatoes and promised I'd share my recipe on the blog. The sauce is so simple, only 3 ingredients and 2 "spices". The key to this wonderful recipe is the tomatoes. You want to select big, juicy, ripe tomatoes. Fat Boy tomatoes or Ugly Ripe Tomatoes are a good choice; Beefsteak Tomatoes would be nice as well. Saucy Tomatoes by Elizabeth @rawlivingandlearning.BlogSpot.com   1 ripe Haas avocado juice of 1 lime 4 sundried tomatoes (sulfite free) 1/2 Tablespoon of dill 1/2 Teaspoon of dried onion flakes   In a high speed blender, or small food processor, blend until creamy and thick. Add drops of water slowly if sauce initially is too thick. Slice your tomatoes into rounds and top with some sauce. Garnish with sprouts and basil. Makes enough sauce for 6 large tomato rounds. Diced Pears and Sauce

Prior to my evening meal, which is usually greens and sprouts, I will have a fruit dish of some sort. I do this to make sure I get enough calories and healthy carbs, since a dinner of just greens and sprouts doesn't add up much in the calorie department. This week I purchased two bags of organic pears from Trader Joe's and 2 cartons of organic strawberries. The combo of the two sounded really good tonight. Here is the super simple sauce I made to drizzle over top of three organic pears. It is simply amazing! The first bite said, "Strawberry shortcake!!" The dates sweetened it up so nicely it tasted just like the sweet sauce my grandmother use to make for her shortcake. Hers of course was sweetened with white sugar--big no no. Now we know better and sweeten things with delicious dates. Berries With Raw Coconut Kream by Elizabeth @ rawlivingandlearning.blogspot.com 1 carton of fresh organic blueberries 1/2 C raw flaked organic coconut, soaked 8 hours (keep soak water) 1 T hemp seeds 1 T chia seeds 1-2 tsp raw vanilla powder water as needed to blend sprouted quiona (optional) In a high speed blender, add the coconut and the soak water. Blend on high for a minute. Next add the chia, hemp, and vanilla. Blend on high until smooth and thick. Add water as needed for proper blending. Place washed berries into a serving bowl and pour the kream on top. Enjoy! As I was eating this I decided to add some freshly sprouted raw quiona--it was divine! Made a fantastic breakfast "cereal". +JMJ+ Today I am grateful for my nourishing and healing wheat grass!! I am consuming 2oz 4x/day and loving it.
