Famous Pineapple Mango Salsa from CHI


Creative Health Institute has some mighty amazing raw recipes, as I posted about in my last entry, and this one is at the top of my favorites list! The combination of pineapple and mango with a hint of heat (I added red pepper flakes) is amazing served in a creamy, ripe, avocado boat. And of course it would be fantastic served with some raw corn chips--wish I had some!
Famous Pineapple Mango Salsa
from Creative Health Institute

2 C diced raw pineapple
2 C diced, organic, raw mango
1/4  organic red bell pepper
1/4 organic orange bell pepper
1/4 organic red onion, diced
1/4 C fresh cilantro, finely chopped
2 organic limes, juiced (I used key limes from our tree)
S and P to taste (I omitted)
**I added a good sized pinch of red pepper flakes
DIRECTIONS:
Stir together all ingredients, pour into a serving dish. Enjoy!
I served mine on a bed of salad inside avocado boats and drizzled the juices over the salad greens as my dressing. As I was eating this dinner I couldn't help but think it was good enough to be served at a raw restaurant! This is so delicious and I highly recommend you give it a try.
