Meal #1 Tropical Blend Smoothie

The children and I really enjoyed this smoothie. It was so creamy from the small amount of soaked almonds and walnuts that I added. I only used 1 tablespoon but it made such a difference in the texture of the smoothie. When I don't have fresh nut milk on hand I'll just throw in a few whole nuts, whatever I have stashed in the freezer. I pre-soak and sprout nuts, allow them to air dry and then pack them in bags in the freezer. Here is my smoothie recipe:

Tropical Blend Smoothie

8 oz bag of tropical blend fruit
1 C filtered water
2 T raw pumpkin seeds
1 T combo of soaked walnuts and almonds, chopped
2 T flax
2 T chia seeds
1 inch piece of fresh aloe, peeled
4 C kale
1 C ice
3 ripe bananas
3 Medjool dates, pitted
Blend until creamy in a high speed blender.


Meal #2 Simply Green
This lunch was fantastic! So simple, so green, and so good. Here is how it looked in all of its green goodness:

sunflower greens
3 peeled and sliced kiwis
2 stalks of celery, sliced
sprouted mung beans
fresh cilantro
Plate the sunflower greens, top with the kiwi and then the mung beans, celery and cilantro. Drizzle on some color with this drizzle:

In a personal size blender, blend together:
Juice of 1 orange
Handful of raspberries
1 T sweet onion like Vadalia

Meal #3 Raw Pasta and Sauce

Raw Pasta and Sauce

1 zucchini, spiralized into noodles
Sauce:
1 C fresh tomatoes, chopped
1/2 C fresh juiced OJ
squeeze of lemon juice
3 sun dried tomatoes cured in EVOO
3 plain sun dried tomatoes, soaked till soft
2 dates
fresh sage to taste
fresh basil to taste
1 handful of a combination of walnuts and almonds, finely chopped
pinch of Himalayan salt

Blend until creamy in a blender. Pour over the raw zucchini pasta. Enjoy!

Thanks for your nice comment.
I use an upright Chen spiralizer. It is very inexpensive but works great!!! It cleans up easily and is portable!!

We do the same thing in our house (toss some raw nuts in our smoothies when we are out of nutmilk).

Love the red and green plates of food. So festive. I especially like the one with the kiwis.
