Swimming Blueberries
Swimming Blueberries, swimming in a pool of Creamy Coconut Cashew Mylk that is.
Today I was wanting something rich and creamy to enjoy with these beautiful organic blueberries that I found at the organic market yesterday. I've been going crazy for the berries lately and will be sharing two more berry recipes in the next few days.
1 C filtered water
1/3 C raw cashews
1 T raw coconut, shredded and dried
1 tsp pure maple syrup
1 carton organic blueberries
3 T white chia seeds
In a high seed blender, blend the water, cashews, coconut and syrup until smooth and creamy. Pour 3/4 of the milk into a bowl and stir in the chia seeds. Allow to set for 20 minutes. Top with the blueberries and a drizzle of the remaining mylk. Enjoy!
I decided to add some cinnamon at the last minute--fabulous.
