***So far I am really pleased with how everything is going. I am really shocked at how quick my recovery time has been. I thought for sure I wouldn't be able to walk today, the butt and thigh workouts are so tough, but I am feeling fantastic. Just slight soreness but no stiffness. Yeah!! I think I may try running outside tomorrow night after Mass. I'll let you know how that goes or if I even do it ;)

Smoothie of the day:
3 Harry & David Pears
4 ripe bananas
water
1/2 C frozen mango, thawed
1/2 C frozen wild blueberries, thawed
3 C of Organic Herb Mix
3 C of Organic Herb Mix
Blended it all up in the blender and then ate it out of my favorite bamboo
bowl. It doesn't look pretty when you blend blueberries with greens, but trust me, it is delicious!!!

Second Meal of the Day/Dinner:
Usually if I choose to eat a small amount of cooked vegan food, it tends to be on the weekend. This weekend I had some vegan vegetable sushi after having a very simple, yet very large plate of shredded romaine lettuce. I also munched on several organic baby carrot sticks--love the crunch! The only portion of the sushi that was cooked was the rice. It is easy to unroll them, remove the rice and eat the veggies and Nori wrap! I followed it up with some more romaine salad and some Kim Chi for probiotics and enzymes. When we go out for dinner on date nights I some times have to improvise and do the best I can. As long as 85% of my meal is raw I still feel great and have no regrets whatsoever, and everything seems to digest great.
